Our own spec sheets call for 5 °C to 25 °C, around 50% relative humidity, and proper drying time between coats. A factory can control all three. A building site in November usually cannot.
Boards can be coated on all sides before they go up. The back face and the ends are common entry points for moisture, and once the cladding is installed, they are difficult or impossible to reach.

Large elevations finished in a single production run tend to look like one wall rather than several. Colour is much harder to keep consistent when a site is finished over several weeks.
End grain absorbs water much faster than face grain, yet sealing cut ends is one of the most commonly missed steps on site. In a factory it is part of the process, not an afterthought.
